Ingredients
- 2.5 lbs of Cheddar Cheese (a combo of mild and sharp).
- 2 cans of evaporated milk (I did not find a Paleo substitute for this that works well without changing the taste).
- 1 stick of butter.
- 1 tbs of tapioca flour
- 2 tbs of black pepper
- Paprika from sprinkling.
- 2 heads cauliflower, stems discarded.
Instructions
- Wash and cut cauliflower into florets.
- Shred or cut cheese and put aside.
- Create Roux by browning flour in a saucepan with butter while whisking until thickened.
- Add 1 can Evaporated Milk and whisk over medium heat.
- Add cheese to post and stir frequently as it melts.
- Add black pepper.
- Add additional milk from 2nd can as needed. It should be thick but not stiff.
- While cheese is melting, stem cauliflower until soft. you can also microwave it for 4 minutes without water.
- Layer cheese and cauliflower in a casserole dish and sprinkle final layer with Paprika.
- Place dish on cookie sheet and bake at 325 degrees until set.
