Cauli-Faux Mac and Cheese

Ingre­di­ents
  • 2.5 lbs of Ched­dar Cheese (a combo of mild and sharp).
  • 2 cans of evap­o­rated milk (I did not find a Paleo sub­sti­tute for this that works well with­out chang­ing the taste).
  • 1 stick of butter.
  • 1 tbs of tapi­oca flour
  • 2 tbs of black pepper
  • Paprika from sprinkling.
  • 2 heads cau­li­flower, stems discarded.
Instruc­tions
  1. Wash and cut cau­li­flower into florets.
  2. Shred or cut cheese and put aside.
  3. Cre­ate Roux by brown­ing flour in a saucepan with but­ter while whisk­ing until thickened.
  4. Add 1 can Evap­o­rated Milk and whisk over medium heat.
  5. Add cheese to post and stir fre­quently as it melts.
  6. Add black pepper.
  7. Add addi­tional milk from 2nd can as needed. It should be thick but not stiff.
  8. While cheese is melt­ing, stem cau­li­flower until soft. you can also microwave it for 4 min­utes with­out water.
  9. Layer cheese and cau­li­flower in a casse­role dish and sprin­kle final layer with Paprika.
  10. Place dish on cookie sheet and bake at 325 degrees until set.
